Coconut Banana Chocolate Chip Muffins
Coconut lovers will absolutely love these! It’s like taking a little mini vacation. Banana muffins packed with tons of coconut! Coconut oil, coconut milk and coconut flakes mixed in and on top. Studded with chocolate chips. They smell absolutely amazing too while baking!
Ingredients
- 1 cup mashed banana (2 large bananas)
- 1/3 cup coconut oil, melted
- 1/2 cup honey or maple syrup
- 2 eggs
- 1/4 cup full fat coconut milk
- 1 tsp. vanilla extract
- 1 3/4 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 cup coconut flakes
- 1 cup dark chocolate chips
Directions
Preheat the oven to 425.
Line two muffin tins with paper liners.
In a large bowl mash the bananas with a fork. Add in the coconut oil, honey, eggs, coconut milk, and vanilla extract. Mix it all together until combined.
Then add in the flour, baking soda, cinnamon and salt. Continue to mix until all the dry ingredients are incorporated. Then stir in the coconut flakes and chocolate chips. Using an ice cream scoop, scoop into prepared muffins tins. I like to put the liners in ever other hole so they rise higher. Sprinkle a couple chocolate chips and coconut flakes over the top. Bake at 425 degrees for five minutes, then reduce the heat to 350 and continue to bake for about 15-17 or until a toothpick inserted comes out clean. Remove from the pan to let cool and enjoy! Store in an air tight container.
