Chocolate Banana Peanut Butter Cups
I always have a sweet tooth, and sometimes when I want something fast and don’t want to turn on the oven these are going to be my new go-to. 4 simple ingredients that you probably have in the kitchen. Pureed bananas mixed together with dark chocolate, creamy peanut butter and a little vanilla for added richness! Finished off with a little flaky sea salt. These are heavenly, and the kids love them! They think they are eating ice cream!
Ingredients
- 2 bananas
- 3/4 cup dark chocolate chips
- 2 tbsp creamy peanut butter
- 1 tsp. vanilla extract
Directions
In a food processor with metal blade attachment, puree the bananas, scraping down the sides until smooth. In a small bowl melt together the chocolate chips and peanut butter in the microwave. Melt in 30 seconds intervals stirring between until melted and smooth. Pour into the pureed bananas and add in the vanilla extract. Puree everything together.
Pour into a muffin tin with muffin cups or a silicone muffin pan, about 2 tbsp or half way up into each one and place in the freezer to chill for at least 30 minutes. Pop them out and sprinkle flaky sea salt over the top and serve cold! Enjoy! Keep in an air tight container in the freezer for up to a month.
