Chicken Banh Mi Sandwiches
With summer just a day away I wanted to try switching things up so I made this Vietnamese chicken banh mi. It’s sweet, spicy and salty grilled chicken loaded up with a siracha honey, pickled vegetables and lots of herbs. It’s so bright and delicious and so much healthier than a take out sandwich. I like to marinate the chicken for like 20 minutes just to ensure that great flavor. But it’s the perfect sandwich for lunch or dinner!!
Chicken Marinade
Ingredients
- 1 lb. boneless skinless chicken thighs
- 3 garlic cloves, minced
- 1/2 inch fresh ginger, peeled and minced
- 1/2 cup low sodium soy sauce
- 3 1/2 tbsp. brown sugar
- 1/4 mirin
- 1 tbsp. sambal
- juice from one lime
Directions
Mix all the ingredients together in a large bowl and place the chicken in. Mix it all around to make sure everything is coated, cover and let sit in the fridge for 20-30 minutes.
Once it’s all marinated, grill the chicken for about 5-7 minutes on each side just until its got those great char grill marks and reaches 165 internally. Let rest for a minute then slice it up.
Banh Mi
Ingredients
- Marinated chicken
- 2 white hoagie buns
- herbs, cilantro, thai basil, mint
- 1 jalapeno, thinly sliced
- bean sprouts
- pickled vegetables, carrots and cucumbers
- siracha honey mayo
- 1/4 red pepper, thinly sliced
Siracha honey mayo
- 1 tbsp. siracha
- 1 tbsp. honey
- 3 tbsp. mayo
Mix all together in a small bowl
Directions
To assemble the sandwiches, grill the bread quick if you want a little toast on there. Then spread the siracha honey evenly on all sides, load it up with the chicken, pickled vegetables, herbs, and bean sprouts. Enjoy!!
