Chai Sugar Popovers
Oh man these are so good!! So light and airy! The chai spice really warms you right up. If you’ve never made a popover before they are kind of like an airy donut but better. The high heat and eggs really help them rise and get so puffy! Perfect for any weekend baking project!

Ingredients
- 6 tsp + 1 tbsp butter, unsalted
- 1 1/2 cups whole milk, room temperature
- 3 eggs, room temperature
- 1 tsp. vanilla extract
- 1 1/2 cup all purpose flour
- 1 tsp salt
- 4 tbsp. butter
- 1/2 cup granulated sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cardamom
- 1 tsp. ground nutmeg
- 1/4 tsp. allspice
- 1/4 tsp. ground cloves
Directions
Position oven rack to bottom third of oven and preheat oven to 450 degrees.
Place 1 tsp of butter in the bottom of each cup of the standard 6-popover pan. Place the pan in the oven to heat up for the last 5 minutes of preheating just to melt the butter.
While the pan is heating up make the batter, in a large bowl whisk together the milk, eggs and vanilla and 1 tbsp. melted butter. Then add in the flour and salt. Whisk until smooth, it’s ok if there are small lumps though.
Remove the pan from the oven and pour the batter in about 3/4 of the way up each cup. Place back in the oven for 20 minutes. The reduce the heat to 350 and continue to bake for 15-18 minutes. Make sure not to open the oven while they are baking.
Meanwhile melt the 4 tbsp of butter in a small bowl and in a separate bowl combine the granulated sugar with the spices.
When the popovers are done they will be puffed and golden. Brush the melted butter over each one and then roll in the chai sugar. Serve warm. Enjoy!!
