Carne Asada Tacos
I absolutely love making these carne asada tacos, when I need a really quick an easy dinner. The beef is marinated in herbs and citrus juices and grilled with charred tortillas, queso fresco, red cabbage and a little cilantro. Perfect for a small group or large gathering. If you’re grilling outside you may want to invite the neighbors over.
Ingredients
- 1/3 cup lime juice (about 3 limes) plus more for grilling
- 1/3 cup fresh orange juice (about 2 oranges)
- 1/3 extra virgin olive oil
- 2 tsp, dried oregano
- 2 tsp. cumin
- 4-5 garlic cloves, peeled
- 1 medium yellow onion, peeled and quartered
- 3 lbs. mixed beef thinly sliced(either flank, ribeye, short ribs, or skirt steak)
- salt and black pepper
- toppings- thinly sliced red cabbage, avocado, lime, queso fresco, cilantro, jalapeno
- 8 corn tortillas
Directions
In a large bowl combine together the citrus juices, olive oil, oregano, cumin, garlic, and onion. Whisk it all together. Add in the beff and mix until it’s all combined. Cover with plastic wrap and let it marinate for at least one hour or over night.
When you’re ready to cook, either heat up a skillet or grill over high heat. Cook the beef for about 3-4 minutes on each side depending on the beef. Transfer to a cutting board and let it rest while you get everything else ready.
On an open flame char the corn tortillas for about 30 seconds on each side. Then put all the toppings in bowls.
To assemble fill the tortillas with beef, and any of your favorite toppings. Finish with a little more lime juice and enjoy!
