Buffalo Chicken Meatballs

Whether you’re looking for a quick snack or appetizer for game day, these buffalo chicken meatballs are amazing! Kind of a fun twist on the classic favorites. The meatballs are tender and juicy with melted butter and franks hot sauce dipped in the creamy tangy blue cheese dressing, this is sure to please a crowd.

Buffalo Chicken Meatballs

Ingredients

  • 1 lb. ground chicken
  • 2 tsp. onion powder
  • 1 1/2 tsp. garlic minced
  • 1 tbsp. buffalo hot sauce
  • 1 egg
  • 3/4 cup panko bread crumbs
  • 1 tbsp. chives, minced
  • salt and black pepper

Buffalo Sauce

  • 1/2 cup (1 Stick) unsalted butter
  • 1/2 cup buffalo sauce

Blue Cheese Dressing

  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 3/4 cup buttermilk
  • 1/2 lemon juiced
  • 1 cup crumbled blue cheese
  • 1 tbsp fresh chives

Directions

Preheat the oven to 350 degrees.

In a large mixing bowl combine the ground chicken, onion powder, garlic, buffalo sauce, egg, panko bread crumbs, chives, salt and black pepper. Use your hand to mix everything evenly together. Then use a little 1-2 tbsp scoop to ball up the meatballs and place them evenly onto a baking pan. Place in the oven to bake for about 12-15 minutes until slightly golden and baked through.

While the meatballs are baking, in a small sauce pan melt together the butter and buffalo sauce. Then set aside.

For the blue cheese dressing, in a food processor with a metal blade attachment combine the mayo, sour cream, buttermilk, lemon juice and crumbled blue cheese. Whip everything together until combined making sure to scrape down the sides. Pour into serving bowl and gently mix in the chives and also save a couple to use as garnish.

When the meatballs are done, place in a bowl and pour the melted butter and buffalo sauce over the top and toss together until coated. Place meatballs and blue cheese dressing on serving platter along with celery sticks and garnish with chives. Enjoy!!
