Blueberry Thyme Puff Pastry Bites

So I had the intention of making puff pastry twists this morning but realized I didn’t have any sheets of puff pastry and only the shells. So it was a full experiment to see if these would work and they absolutely delivered! Layers and layers of flaky puff pastry filled with a blueberry and thyme jam, baked until golden and crisp. They are perfect for a gathering of quick little breakfast. Added bonus really quick and easy to make!

Ingredients

  • 1 cup blueberries
  • 1/3 cup honey
  • 1 tbsp thyme leaves
  • 1 tsp lemon juice
  • 6 frozen puff pastry shells
  • egg wash

Directions

Preheat the oven to 425 degrees.

In a small sauce pan add the blueberries, honey, thyme and lemon juice. Place over medium heat and cook down until thickened, about 5-8 minutes. Stirring occasionally. Smash some of the blueberries down with a fork and then remove from heat to cool slightly.

Break apart the puff pastry shells and place onto a sheet pan lined with parchment paper. Brush with egg wash and place about 2-3 tsp. on the center of each shell. Place in the oven to bake for about 18-20 minutes until deep golden, puffed up and flaky. Let cool slightly and serve warm or room temperature. Enjoy! This recipe can be very easy to modify if you need more as well!
