Blueberry Mint Lemonade
Looking for a little something to beat the heat?! This blueberry lemonade is just the best! Homemade lemonade is a game-changer. Its bright and vibrant and great by itself or add a little vodka or effervescence to it and really make it fun. Hope you enjoy!

Ingredients
- 1 1/2 cups sugar, divided
- 5-6 lemons, juiced (yielding 1 1/4 cups)
- 3 lemons zested
- 3 1/2 cups water
- 1 cup fresh mint leaves
- 1 pint fresh blueberries
Directions
In a medium sauce pan add 1 cup of sugar and 1 cup of water. Bring to a boil just until the sugar dissolves. Then remove from the heat and add in the blueberries and mint. Let steep in the syrup for about 5 minutes to cool. Then use a fork or potato masher to mash the berries into the syrup, then place in the fridge to cool.
In a small bowl mix together 1/2 cup sugar and the lemon zest mix together.
In a larger bowl place a fine mesh strainer over the top and juice all the lemons. Add the lemon sugar to the lemon juice and then pour the blueberry syrup through the strainer into the lemon juice. Pour into serving pitcher and finish with the remaining 2 1/2 cups water. Give it a stir and serve over ice, and garnish with mint, lemon wedge and more blueberries! Enjoy!
Keep in the fridge and give it a shake or stir, it will separate.
