Blood Orange Chia Seed Pudding

 

I love making this for breakfast or a snack. I’ve been really craving citrus lately and since it’s in season I thought the color of blood orange would be so pretty with the chia seeds. They are a total superfood that have a ton of wonderful health benefits. If you make this the night before it will be perfect in the morning for a quick breakfast.

 

Blood Orange Chia Seed Pudding

Ingredients

  • 3/4 cup Greek yogurt
  • 1/2 cup blood orange juice
  • 1/2 tsp. vanilla extract
  • 1/4 tsp orange blossom water
  • 2 tbsp. honey
  • a pinch of salt
  • 1/4 cup chia seeds
  • 2 blood oranges
  • chopped shelled pistachios for garnish

Directions

In a small bowl whisk together the greek yogurt, blood orange juice, vanilla, orange blossom water, and honey. Stir in the chia seeds and salt. Cover and refrigerate for 8 hours or over night.

Give the pudding a good stir and divide into small bowls. Cut the peel and white pith off of the oranges. Cut along the membranes to release the segments into a bowl. Garnish the top of the pudding along with the chopped pistachios and enjoy!!!
