Berry Cobbler

I found such beautiful berries at the store yesterday and had to make this cobbler! It’s perfect for when guests come over and you can just bake it off while you’re eating dinner. All you do is mix the batter in a bowl and pour into the hot baking pan and sprinkle over the berries then bake it off. Serve with fresh whipped cream or ice cream and it’s sure to be a hit!

Ingredients

  • 1 lb. strawberries , hulled and halved
  • 1 lb. raspberries
  • 1 cup granulated sugar, divided
  • 8 tbsp. (1 stick) unsalted butter
  • 2 1/4 cup all purpose flour
  • 2 1/2 tsp. baking powder
  • 1 1/4 cup milk
  • 2 tsp. vanilla extract
  • 1/2 tsp. salt

Directions

Preheat the oven to 350 degrees.

Place the butter into a 9×13 inch baking pan and place in the oven for about 10 minutes to heat up and melt the butter.

In a large bowl combine the berries with 1/3 cup of the sugar mix together and set aside to macerate.

Meanwhile, in another large bowl combine together the flour, baking powder, salt, and remaining sugar. Whisk it all together and then add in the vanilla and milk. Mix together until just combined.

Carefully remove the baking pan from the oven and pour the batter into the pan spreading it out evenly. Then sprinkle the berries over the top and place back into the oven to bake for 55-60 minutes until it’s puffed and golden.

Let it sit and cool for 15 minutes before serving. Serve with fresh whipped cream or ice cream! Enjoy!
