Berry Cobbler
This is such a perfect dessert for a small get together, Easter is coming up! It’s packed with tons of fresh juicy berries and then topped with a crumbly, buttery cookie like biscuits on top, that just gets soaked up by the berry juice. With just a few simple ingredients you can have this on the table in no time! Top with whipped cream or ice cream and you will have everyone asking for more!
Filling
Ingredients
- 2 cups strawberries, quartered
- 1 1/2 cups blueberries
- 1 cup raspberries
- 1/4 cup granulated sugar
- 1 tsp. ground cinnamon
- 3 tbsp. orange juice
- pinch of salt
Directions
In a large bowl combine everything together and gently mix together so everything is evenly coated, making sure to not crush the berries. Pour into baking dish or cast iron.
Crust
Ingredients
- 1 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 1 egg
- 1/2 cup melted butter
- 1 tsp. vanilla extract
Directions
Pre heat the oven to 350 degrees F.
In a medium bowl combine all the dry ingredients, flour, sugar, baking powder, and salt. Mix it all together and create a well in the center. Pour the cooled melted butter in the center along with the egg, and vanilla. Gently start mixing it all together. It will be thick like cookie dough. Then grab a large spoon and dollop large spoonfuls onto the berries spreading it all around. Place in the oven and bake for about 30-35 minutes just until golden and bubbly perfection! Serve hot or warm with ice cream so it just melts into everything!! YUM!
