Asian Turkey Lettuce Wraps
So much beautiful lettuce at the market I couldn’t resist!
These are such quick little wraps to make, and so easy. Not to mention, they are full of color and packed with flavor!
For Peanut Sauce:
Ingredients
- 1 cup creamy peanut butter
- 1 tbsp. garlic, minced
- 1 tbsp. ginger, peeled and minced
- ¼ cup fresh lime juice
- ¼ cup fish sauce
- ¼ cup low sodium soy sauce
- ¼ cup red curry paste
- 1/3 cup water, or just enough to thin it out a little
Directions
In a food processor with a metal blade attachment, place all ingredients in and mix on high speed until all incorporated. Add a little more water if it seems too thick. Set aside.
For Lettuce Wraps:
Ingredients
- 1 lb. ground turkey
- 1 red bell pepper, cored, seeded and julienned
- 1 orange bell pepper, cored, seeded and julienned
- 1 yellow bell pepper, cored, seeded and julienned
- 2-3 scallions
- 1 head of oak leaf lettuce
- 1 carrot, peeled and julienned
- Chopped peanuts for garnish
- ½ cup low sodium soy sauce
- 2 tsp. sesame oil
- 3 tbsp. rice vinegar
- 2 tbsp. garlic, minced
- 1 tbsp. ginger, peeled and minced
- Salt and pepper
- Peanut sauce (recipe above)
Directions
In a large sauté pan with a little bit of oil, start browning the turkey on a medium heat. With a large wooden or metal spoon, start breaking up the turkey and add the soy sauce, sesame oil, rice vinegar, garlic, ginger, salt and pepper. Brown it for about 10 minutes until all liquid is absorbed.
Now we assemble!! On your plate, grab 4 leaves of lettuce, two for each wrap. Fill with turkey and add all the vegetables you want. Drizzle with the peanut sauce. Garnish with scallions and peanuts. Serve immediately.
