Asian Quinoa Salad
I love making this Asian quinoa salad and then having it through the week. So quick and barley any cooking. Packed with a rainbow of colors and flavors, cilantro, mint and then finished with a creamy peanut dressing. We had it for dinner last night and it was just what we needed after all the holiday food!
Peanut Dressing
- 3 garlic cloves, peeled and minced
- 1/2 inch ginger, grated
- 2 tbsp honey
- 2 tbsp. rice vinegar
- 1 tbsp. sesame oil
- 1/4 cup soy sauce
- 3 tbsp. creamy peanut butter
Add everything to a small bowl or jar and mix together until combined. Set aside.
Asian Quinoa Salad
- 3 cups cooked quinoa
- 1/2 English cucumber, thinly sliced
- 1/3 cup purple cabbage, thinly sliced
- 1 cup carrots, peeled and grated or matchstick
- 2 tbsp. mint
- 2 tbsp. cilatnro
- 2 scallions, greens thinly sliced
- wonton strips
Directions
In a large bowl add the quinoa and all the vegetables, herbs and scallions. Mix it all together and then pour the dressing over the top. Toss to combine and sprinkle the wonton strips over the top. Serve and enjoy!
