Apple Ginger Pie
Thanksgiving is right around the corner! Who’s ready?! We celebrated a friendsgiving yesterday so I decided to take the standard apple pie and spice it up with some crystalized ginger. You can always buy a pie crust as well, but there is something special about a homemade pie crust, it’s just flaky and buttery and made with love.
Ingredients
- 2 pie crust (recipe follows)
- 6-8 cups firm thinly sliced apples, (peel optional)
- 1/2 cup crystalized ginger, chopped
- 1 lemon juiced
- 1/2 cup granulated sugar, depending on the sweetness of apples
- 2 tbsp. all-purpose flour
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground cloves
Directions
Preheat oven to 375 degrees F. Prepare and roll out the pie crust to about 9 inches. Roll the first one into the bottom of the pie plate. Trim any excess around the edges. Roll out the second crust to about 9 inches as well and cut into 1/2 inch long strips.
Combine all the sliced apples with the crystalized ginger, sugar, lemon, flour and spices into a large bowl to make sure everything is evenly coated. Pour the apples into the bottom pie crust.

To start with the lattice crust weave the strips over each other. Fold every other strip in half and place another strip across the middle of the pie, perpendicular to the first strips. Then unfold the first ones back over to create the lattice. Continue until the whole crust is covered.
Brush the crust with egg wash and sprinkle the top with sugar to create the golden brown crust.
Place in the oven and bake for about 40-45 minutes until crust is golden and filling is bubbly. Cover crust with tin foil if it starts to get too brown. Serve warm a la mode if desired!
Pie Crust
Ingredients
- 2 1/4 cup all-purpose flour
- 3/4 tsp. salt
- 2/3 cup cold diced butter
- 8-10 tbsp. cold butter
Directions
In a food processor with a metal blade attachment add the flour, salt and butter. Pulse until the butter is all pea size and broken up.
Slowly add the water with the machine running until the dough comes together. Remove the dough from the machine and gently knead the dough together and then divide into two halves and roll out the crust.
