Almond Cookies with Green Tea Ice Cream Sandwiches
I absolutely love anything almond and especially almond cookies! These are just amazing so butter and flaky, and the green tea ice cream adds just that little something special. If you don’t prefer green tea you can always substitute, be creative! The options are endless!!

Ingredients
- ½ lb. (2 sticks) unsalted butter, cold, cubed
- 2 ½ cups All-Purpose Flour
- ½ tsp. baking soda
- ½ tsp. kosher salt
- 1 cup sugar
- 1 egg, slightly beaten
- 2 tsp. almond extract
- ½ tsp. vanilla extract
- 30 sliced blanched almonds
- 1 cup green tea ice cream, softened

Directions
Pre-heat the oven to 350 degrees F.

Cut the butter into the sifted dry ingredients using a pastry cutter or your hands, until small crumbles. Add the egg and extracts mix until all combined. It’s easier using your hands. Shape into 1 inch balls and flatten onto ungreased baking sheet 1 inch apart. Place the almonds decoratively on the cookies.

Bake for 12-15 minutes until slightly golden. Cool completely. Scoop about ¼ cup ice cream scoop onto ½ the cookies and top with the other ones. Freeze for about an hour. Enjoy!!
