Artichoke Pesto Pizza
Pizza Night! Always a favorite night in this household. Artichoke Pesto with diced turkey, roasted red peppers, greens, toasted pine nuts and parmesan! I love this artichoke pesto, it’s so light and creamy. The artichokes give it the rich creaminess without all the cheese and I just love it.
Ingredients
- 1 homemade or good quality store-bought pizza dough
- 3 tbsp. olive oil
- 4-5 garlic cloves
- 1 tbsp. fresh oregano
- 1 tbsp. fresh parsley
- 1 pinch red pepper flakes
- salt and black pepper
- artichoke pesto (recipe follows)
- 1 cup diced roasted turkey
- 2 roasted red peppers, sliced
- handful arugula and spinach
- 1 tbsp. olive oil
- 2 tbsp. lemon juice
- 1/2 cup toasted pine nuts
- Shaved parmesan
Directions
Preheat the oven to 450 degrees F. Roll out the dough to about 12 inches in diameter. Place on pizza stone or baking sheet and prick it with a fork, to release any air bubbles that may rise.
In a small sauté pan heat the olive oil over medium heat. Add the garlic cloves, peeled and whole along with the red pepper flakes. Heat until the garlic just starts to turn brown and gets soft. Add the herbs right at the end. Brush oil over the crust and season with salt and pepper. Bake for about 12-15 minutes until crust is bubbly and golden brown.
After it’s baked spread the artichoke pesto evenly over the crust and build the pizza with turkey, peppers, arugula and spinach. Squeeze the lemon juice over the greens and drizzle a little olive oil. Sprinkle over the toasted pine nuts and garnish with shaved parmesan. Cut into pieces and serve.
Artichoke Pesto
Ingredients
- 8 oz. Jar of artichokes
- 1 bunch fresh Italian parsley
- 1/2 cup fresh oregano
- 1/2 cup toasted walnuts
- 1 lemon juice and zest
- 3 garlic cloves
- pinch red pepper flakes
- 1/2 cup extra virgin olive oil
- salt and pepper to taste
Directions
In a food processor with a metal blade attachment combine the artichokes, herbs, walnuts, lemon, garlic and red pepper flakes. Stop the machine every once in a while and scrape down the sides. Slowly drizzle in the olive oil and season with salt and pepper until all the ingredients are combined and smooth.
