BBQ Beef Sandwiches with Slaw and Homemade Pickles
We had a couple of friends over last night for dinner, so I wanted a dinner that didn’t need a lot of dishes. Fast clean up! This BBQ is so rich, smoky, spicy all the flavors just melt together and the longer it sits on the stove the better it gets. The slaw and pickles bring a nice crispness to the sandwich that’s just perfect! I made my own BBQ but I’m sure you can buy a bottle to use if you would like.
BBQ Beef

Ingredients
- 3 tbsp. extra virgin olive oil
- Salt and pepper
- 2-3 lb. beef chuck roast
- ½ cup yellow onion, small diced
- 2 tbsp. garlic, minced
- 1 tbsp. fresh ginger, minced
- 1 jalapeno, minced
- 1 qt. ketchup
- 1 cup brown sugar
- 3 tbsp. liquid smoke
- 2 tbsp. chili powder
- 1 tsp. mustard powder
- Pinch of cayenne
- 2 Dashes of tabasco
- 3 tbsp. Worcestershire
- 1 (28 oz.) can crushed tomatoes
- 6 Sesame buns
Directions
I used a 5 qt. nonstick Dutch oven to make this on the stove. If you don’t have a Dutch oven just make sure it’s a large nonstick braising pan.
Start by heating up the pan to medium high heat with the olive oil. Take the beef and cut it into large pieces. Season it with salt and pepper. Brown the beef in the hot oil just until crust forms on each side.
Meanwhile in a separate sauce pan sauté onions, garlic, ginger, jalapeno just until tender. Add the rest of the ingredients except the tomatoes and bring to a low simmer. Stirring constantly, when the BBQ gets heated through pour over the beef and add the tomatoes. Depending on how spicy you want it, you can alter the cayenne or tabasco. Bring the whole thing to medium low heat or a low simmer, cover and let cook for about 3 ½-4 hours. Stir it every once in a while to make sure it’s not browning too much on the bottom. When it starts falling apart, use a fork to pull it apart. It should shred very easily. Toast the buns if you wish and build the sandwiches. Add the slaw and pickles for that lovely little sweet crunch. Enjoy!
Slaw
Ingredients
- 1 cup carrots, peeled and shredded
- 1 cup red cabbage, shredded
- Â 1 cup green cabbage, shredded
- 1/3 cup mayo
- ¼ cup white distilled vinegar
- 2 tbsp. sugar
- 1 tsp. siracha
- Salt and pepper
Directions
In a small bowl combine carrots and cabbages together.
In a separate bowl combine the mayo, vinegar, sugar, siracha and whisk together until smooth. Pour over the veggies and season with salt and pepper. Set aside.
Homemade Pickles

- 1 cup white distilled vinegar
- 1 cup water
- ¼ cup sugar
- ¼ cup salt
- 1 tbsp. black peppercorns
- 2 bay leaves
- 1 English cucumber, thinly sliced
Directions
In a small sauce pan combine the vinegar, water, sugar, salt, peppercorns, bay leaves. Bring to a boil, when all the sugar and salt dissolve its ready.
Thinly slice the cucumber and place into a small bowl, pour the vinegar mixture over and chill until ready to use.
