Spicy Rosemary Popcorn
My all time favorite go to snack is popcorn! I feel like I could eat it everyday. It’s so much better homemade than out of the bag, first you can control how much butter and salt goes on it, then you can spice it up with whatever fun flavors you want; or just keep it simple. I like to use coconut oil instead of canola or vegetable just to make it healthier, and it doesn’t really make it taste like coconut at all. A couple of fun flavors for popcorn could be: sugar and salt, salt and garlic powder, herbed, grated parmesan, buffalo sauce with blue cheese crumbles…Be creative!
Ingredients
- 3-4 tbsp. oil (preferably coconut)
- 1/2 cup high quality popcorn kernels
- 1 3-quart heavy bottomed stainless-steel sauce pan, covered
- melted butter or clarified butter
- garlic powder
- cayenne powder
- kosher salt
- fresh rosemary, minced
Directions
The trick to popcorn is to watch it!! DO NOT leave the kitchen. Babysit! Start by pouring the oil into the pan, heat to just above medium. Add a couple of kernels to test. When they pop, you can add the rest. Cover and constantly shake the pan to loosen any kernels off the bottom. You know it’s done popping when the kernels stop popping. If you think it’s done, give it a couple more shakes to see if anymore pop. Remove from heat. Let sit for 1 minute still covered to let last ones pop.
Now the fun part! I like to pour a little of the popcorn into a large bowl season with a little of the butter, salt, rosemary, garlic, and cayenne. More popcorn and more seasonings just so everything mixes evenly, give the bowl a little shake grab a movie and your friends you’ve got popcorn! I really like to eat the whole bowl by myself so if you would like to share you will just need to use a larger pot!
*Kids make sure adults are near when making popcorn, hot oil can be dangerous.
