Pumpkin Oatmeal Cookies with Cranberry and White Chocolate
Happy fall!! My favorite time of the year! I made these the other day when we went to the Brewer game for tailgating, and they got taken into the game by the pocketful. They are chewy and delicious and pack full of all those favorite fall flavors. Not to mention the whole house smells amazing.
Ingredients
- 1 cup All-purpose flour
- 1 tsp. ground cinnamon
- ½ tsp. salt
- ½ tsp ground nutmeg
- ¼ tsp. baking soda
- 1 ½ cups packed brown sugar
- ½ cup (1 stick) butter, softened
- 1 egg
- 1 tsp. vanilla extract
- ½ cup solid-pack pumpkin
- 2 cups uncooked old-fashioned oats
- 1 cup cranberries, dried
- 1 cup white chocolate chips
Directions
Pre-heat the oven to 350 degrees F. Spray cookie sheet with non-stick spray
Sift flour, cinnamon, salt, nutmeg and baking soda into a medium bowl. Beat brown sugar and butter in a large bowl with an electric mixer at medium speed about 5 minutes until light and fluffy.
Beat in egg and vanilla. Add pumpkin; beat at low-speed until all combined. Beat in flour mixture until just combined. Add oats; mix well and stir in cranberries and white chocolate chips. Drop dough by heaping tablespoonfuls about 2 inches apart onto prepared cookie sheet.
Bake about 10-12 minutes or until golden brown. Cool on cookie sheets 1 minute; remove to a wire rack to cool completely.
