Spring Herb Pasta

There’s nothing I love more than homemade pasta! When I have a little extra time in the day and everyone is craving a good dinner, I love making homemade pasta. There’s something so special about it! Now with spring in full swing I have lots of fresh young herbs and edible flowers throughout the garden and wanted to laminate them through the pasta. It makes the herbs just shine through the pasta and it’s so beautiful! You really want to make sure to remove any thicker or harder stems as it will tear through the pasta sheets.

Ingredients

  • 1 cup fresh young herbs and edible flowers
  • 6 egg yolks
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 tsp. salt
  • 2 tsp. olive oil

Directions

In a large bowl add the flour and create a little well in the center. Add in the egg yolks and egg, olive oil and salt. Use a fork and start to gently mix everything together starting at the center and working to incorporate more flour as needed. It will be shaggy at first. Then start kneading it together with your hands bringing it all together until smooth. Knead for about 5-10 minutes. It should be a smooth ball. Cover and let it rest for at least 10 minutes.

Once you’re ready to roll it out, divide the dough in two halves and working with one at a time, start rolling it out. If you have a pasta machine roll the pasta through to about 1/8 inch. Lay it out flat and gently decorate the pasta sheet with the herbs and flowers. Then roll out another sheet and place it over the top of the herb and flower pasta. Gently pressing it together to stick.

Roll it through the machine until it’s the desired thickness. Continue with the other half of the pasta dough. Fold it into an envelope and cut into 1/4 inch thick strips. Or cut through the pasta machine. Continuing with the remaining sheets of pasta. Place on a rimmed floured baking pan.

Bring a large pot of salted water to boil and cook the pasta for about 30 seconds to a minute. Toss with garlic herb butter or desired sauce and enjoy!
