Vegan Maple Cookies

Looking for a ‘healthier’ cookie this holiday season? There’s no refined sugar and they are vegan! Made with all natural ingredients I’m obsessed with these. They are soft and chewy and great for breakfast, afternoon snack or dessert. Also perfect to dunk into a hot cup of coffee as well!

Ingredients

  • 3/4 cup apple cider
  • 3/4 cup pure maple syrup
  • 1/2 cup orange juice
  • 1 tsp. vanilla extract
  • 3/4 cup coconut oil, melted
  • 3 1/2 cup all-purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. ground cinnamon
  • pinch of cloves
  • 1 tsp. nutmeg

Directions

Preheat the oven to 325 degrees.

In a medium bowl combine together the dry ingredients, flour, salt, baking soda, baking powder, spices and whisk together until combined.

Then in a separate bowl combine together the apple cider, maple syrup, orange juice, vanilla extract and melted coconut oil. Whisk all together. Gradually add in the dry ingredients. Stir it all together until combined.

On a greased baking pan scoop out the cookie dough to 2 tbsp balls. Spread them out 2 inches apart. Place in the oven to bake for 15-17 minutes. Until they are crisp on the edges but firm when you touch them. Let cool slightly and place on wire rack to cool completely. Enjoy! Keep in an air tight container for up to 4-5 days.
