Red Velvet Crinkle Cookies
Fudgy rich crinkle cookies are always a holiday favorite and ready for any festive gathering. They are soft and chewy in the center and then rolled in a little powdered sugar and granulated sugar to make them crisp and cracked on the outside. Plus look at that contrast of the red and white. Made with only a handful of ingredients they will be perfect for Santa!
Ingredients
- 1/2 cup unsalted butter, room temperature
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs. room temperature
- 2 1/2 tsp. vanilla extract
- 1/2 tsp. red food coloring
- 2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup powdered sugar
- 1/2 cup granulated sugar
Directions
Preheat the oven to 350 degrees and either grease a baking pan or line it with parchment paper. Set aside.
In a stand mixer or large mixing bowl, cream together the butter and sugars until light and fluffy. Scraping down the sides as you go. Add in the eggs one at a time beating between each one. Then add in the vanilla extract and red food coloring. Continue to mix until it’s all incorporated.
Sift in the dry ingredients, flour, cocoa powder, baking powder and salt. Mix until everything comes together.
In a separate small bowl mix together the powdered sugar and granulated sugar. With a 2 tbsp ice cream scoop, scoop out the dough into little balls. Place into the sugar bowl and roll it around until it’s all covered. Place on the baking pan. Then continue with the rest of the cookies, placing them about 1 inch apart. They will spread a little bit. Bake for about 10-12 minutes until the cookies are puffed up and cracked but are still soft in the center. Allow them to cool and enjoy!
