Apple Crisp Coffee Cake

OH my goodness…..this dense, chewy, warm, delicious cake is seriously everything you need in the cooler months here. I added lots of cinnamon and the oats with a thick layer of cinnamon and brown sugar layered through the cake and studded with apples. Eat it for breakfast, dessert or snack it’s just the best!

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp. vanilla extract
  • 2 eggs
  • 2 cups plain greek yogurt or sour cream
  • 1 stick unsalted butter, melted
  • 2 cups apples, peeled and medium diced
  • 3/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1/2 cup old fashioned oats

Directions

Preheat the oven to 375 degrees.

Grease a 9 x 13 inch baking pan and set aside.

In a large mixing bowl mix, together the flour, sugar, baking powder, baking soda and salt. Whisk everything together until combined.

In a separate medium bowl combine all the wet ingredients, the vanilla, eggs, yogurt, and melted butter. Whisk everything together until smooth and then pour into the dry ingredients and using a rubber spatula mix everything together evenly. It will be a thicker batter. Then fold in the diced apples. Spread half of the batter into the bottom of the baking pan.

In a small bowl mix together the brown sugar, cinnamon and oats. Sprinkle half of the brown sugar mixture over the batter, and spread the remaining batter over the top and sprinkle the remaining brown sugar mixture evenly over the top. Bake in the oven for about 50 minutes to 1 hour. Until it is golden and puffed up. It is done when a toothpick inserted in the center comes out clean. Let cool slightly and then cut it up and serve it. It will keep covered in the fridge for days.
