Blueberry and Nectarine Galette
This family favorite is sure to hit the spot! End of the summer sweet nectarines and bursting blueberries tossed together with a little brown sugar, honey, vanilla and cinnamon just for some warmth. Wrapped up in a flaky buttery puff pastry, just to cut a few steps. Serve warm right out of the oven as breakfast or dessert.

Ingredients
- 1 cup blueberries
- 1/4 cup brown sugar
- 1 tsp. vanilla extract
- 1 tbsp. cornstarch
- 2 tsp. ground cinnamon
- 2 tbsp. butter
- 3 tbsp. honey
- 1 egg
- 1-2 nectarines, thinly sliced
- 1 sheet puff pastry thawed
- cinnamon sugar to sprinkle on top
Directions
Preheat the oven to 375 degrees.
In a small bowl toss together the blueberries, brown sugar, vanilla, cornstarch and cinnamon.
On a lightly floured surface, roll out the puff pastry to about 1/4 inch thick. Place on a parchment lined baking pan. Pour the blueberries into the center of the puff pastry. Then arrange the sliced nectarines on top. Fold and crimp the edges up the center to make sure everything stays in place.
In a small sauce pan, melt together the honey and butter. Once melted brush onto the nectarines.
Then brush the puff pastry with egg wash and sprinkle everything with cinnamon sugar.
Bake for 25-30 minutes until the puff pastry is puffed up and golden and the berries are bursting. Let cool slightly before serving. Cut into wedges and serve with ice cream! Enjoy.
Store in the fridge for about 3 days.
