Ingredients
- 2/3 cup olive oil
- 2 pints heirloom cherry tomatoes
- 6-8 garlic cloves, peeled and smashed
- 3-4 thyme stems
- 6-8 oz burrata cheese
- sliced crusty bread, pan fried or grilled
- salt and black pepper
- 6-8 basil leaves for garnish
Directions
In a large saute pan or skillet add in the olive oil, tomatoes, garlic, thyme stems, salt and black pepper. Place over medium heat and give it a stir so all the garlic and tomatoes are covered in olive oil. Let heat up and go for about 15-20 minutes just until the tomatoes are bursting and releasing their juices.
Once they are heated through and soft, top with the burrata and basil. Drizzle a little more olive oil over the cheese and season again with salt and pepper. Serve with grilled or pan fried bread. To serve spoon the tomatoes and burrata onto the bread and enjoy!!
