Brown Butter Oatmeal Chocolate Chip Cookies

Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1/3 cup granulated sugar
- 2/3 cup brown sugar
- 2 tsp. vanilla extract
- 1 egg
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cup rolled oats
- 1 cup dark chocolate chips
Directions
Preheat the oven to 350 degrees.
Start by browning the butter, in a small pan melt the butter over medium heat. Let it go until the milk solids slowly start to brown on the bottom. Give it a gentle stir and when it starts to smell nutty and turn golden, remove from the heat. Let it cool and then chill in the fridge until firm again.
Spoon the chilled butter into a a stand mixer with a paddle attachment. Add in the granulated sugar and brown sugar. Mix together until smooth, and light and fluffy, scraping down the sides. Add in the egg and vanilla and continue to mix.
Pour in the flour, baking soda and salt. Continue to mix on low until everything comes together. Stir in the oats and chocolate chips, mix until all evenly combined.
Grease a baking pan, and using an ice cream scoop drop 2-3 tbsp spoonfuls onto the pan about 2-3 inches apart. Bake for 12-14 minutes. Sprinkle flaky sea salt on top, let cool and enjoy!
