Mustard Apples and Onions with Beer Brats
Happy fall equinox and Oktoberfest! We may all be celebrating a little differently this year. But if you want to bring some of the delicious fall German food into your own kitchen this one is so good. The apples and onions get cooked down in butter along with apple cider, beer, a little whole grain mustard, the seared beer brats just take in all the flavors and some sage. Pair it along some potato pancakes with chive sour cream, it’s like your right over in Munich celebrating!
Ingredients
- 1 cup yellow onion, peeled and thinly sliced
- 2 medium sized apples, thinly sliced, I love McIntosh
- 2 tbsp. unsalted butter
- 1 tbsp. whole grain mustard
- 1/2 cup beer like an IPA
- 1 cup apple cider
- 1 package beer brats
- 4-5 sage leaves, minced and a couple for garnish
- salt and black pepper
Directions
In a large skillet melt the butter over medium heat, add in the onions cook until they start to soften and caramelize, about 5-10 minutes. Then add in the sliced apples and let those cook down. Once they are softened and not falling apart add in the beer to deglaze the pan and let it reduce to about 1/2 the liquid. Stir in the mustard and cider. While that is coming together, in a separate pan with a little bit of oil sear the brats on all sides just to get a little color and then add them into the apples and onions to finish cooking and heating through. Stir in the minced sage and season with salt and black pepper. Serve along some potato pancakes and a cold beer! Enjoy!
