Coconut Cashew Granola
Homemade granola! Have you ever tried making your own? It’s a game changer. Granola often gets a bad rap for being too sweet or bland or stale. But this is full of flavor it’s crisp not too sweet and you can make a bunch of it to snack on or sprinkle over yogurt and berries. I just used coconuts and cashews because that was what was in my cupboards but you can definitely be creative with the combinations! Plus your whole house will smell absolutely amazing while its bakes!
Ingredients
- 2 1/2 cups old fashioned rolled oats
- 1 cup cashews, rough chop
- 1 1/2 cup sweetened flaked coconut
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 cup pure maple syrup
- 1/2 cup coconut oil, melted
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 1 egg white, beaten until frothy
Directions
Preheat oven to 350 degrees. Line a rimmed baking pan with a silpat or parchment paper.
In a large bowl combine together the oats, cashews coconut, salt and cinnamon. Mix until combined.
Then in a separate small bowl combine together the maple syrup, coconut oil, vanilla and almond extract and the slightly beaten frothy egg. Pour the mixture over the oat mixture and mix so everything is evenly coated.
Pour the mixture out onto the prepared baking pan and spread it out evenly. Bake for about 35-40 minutes. Stirring it up every ten minutes so everything gets evenly browned and crisp. Rotate half way through. Once it is all dried out and golden remove and let it cool slightly before serving. Store in an air tight container to up to one month.
