Chicken Ramen
Ohhh it is getting chilly outside!! What a better way to warm up than with a big hot bowl of ramen?! This is super easy to make and only takes about 30 minutes. Of course the longer you simmer the broth the better but it’s so delicious either way. The broth is simmered with roasted chicken bones, spices, and lots of vegetables. You can mix up the add ins if you want but I like to keep it simple.
Chicken Broth
Ingredients
- 1 Rotisserie chicken bones (save the chicken for the soup)
- 1 cup red onion, peeled and quartered
- 2 medium carrots, peeled and cut into large pieces
- 3 stalks celery, cut into large pieces
- 2 inch ginger root, peeled and cut into pieces
- 1 head garlic, cut in half
- 1 cup soy sauce
- 2 cinnamon sticks
- 1 tbsp. black pepper corns
- 1 tbsp. coriander seeds
- 1 lime juiced
- 1/2 tbsp. fennel seeds
Directions
Place everything into a large stock pot and cover it with water. Bring to a boil and let simmer for about 20 minutes to an hour. Strain everything out reserving the broth and keep warm.
Toppings
- 8 oz ramen
- pulled chicken
- 2-3 scallions, sliced
- 1 carrot peeled and thinly sliced
- 5-6 shiitake mushrooms, stems removed and thinly sliced
- cilantro
- 8 minute hard boiled egg
- lime wedges
Directions
Fill the bowls with all your favorite toppings and then cover with the broth warm up and enjoy!!!
