No Bake Berry Cheesecake

Happy summer and almost 4th of July!!! Celebrate with this sparkling firecracker. This no bake, easy to make, delicious dessert is perfect for any backyard party or watching the fireworks! The filling is five ingredients, cream cheese, heavy cream, powdered sugar, vanilla and fresh berries. Layered on top of a graham cracker crust with a touch of white chocolate and melted butter and then topped with tons of whipped cream and more berries. Perfect for any celebration!

Graham Cracker Crust

Ingredients

  • 1 1/4 cups graham cracker crumbs
  • 6 tbsp. unsalted butter
  • 4 oz melted white chocolate

Directions

In a small bowl combine together the graham cracker crumbs, melted butter and white chocolate just until it’s all moistened and comes together. Press it into a pie or tart pan. Transfer to fridge for about 10-15 minutes just to harden. Meanwhile make the filling.

Cheesecake Filling

Ingredients

  • 2 (8 oz) packages of softened room temperature cream cheese
  • 1/3 cup plus 2 tbsp powdered sugar
  • 4 tsp. vanilla extract
  • 2 cups heavy cream
  • 1 1/2 cup fresh raspberries
  • 1 cup fresh blueberries

Directions

In a large bowl with a electric mixer, whip the cream cheese just until smooth, light and fluffy. Add in the powdered sugar and 2 tsp. vanilla and mix together. While the mixer is running add in 1 cup of the heavy cream just until stiff peaks form. Pour into the prepared crust.

In a small bowl crush 1/2 cup the raspberries with a fork just to release the juices. Spoon over the cheesecake and swirl it in. Sprinkle 1/2 cup of the blueberries over and chill for 1 hour.

To make the whipped cream, mix the other 1 cup of heavy cream with 2 tbsp of powdered sugar and 2 tsp. vanilla just until stiff peaks for about 3-4 minutes. Spread over the top of the cheesecake and sprinkle the remaining berries over the top and chill. Then enjoy!!!!
