Browned Butter Pumpkin Oatmeal Cookies

 

So it’s officially fall!!! Bring on the sweater weather, comfort food, beautiful colored leaves, jewel toned everything, apples and all the pumpkins. Once that first leaf falls I can’t wait for all the fall fun. It’s a little crisp outside here and there is a snuggly baby on my chest as I write this, all my favorite things! I made these cookies yesterday and they were the perfect combination, a little nuttiness from the brown butter, which is very important; brown sugar, pumpkin spice, chewy edges and soft centers.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 2 cups old-fashioned oats
  • 1 2/3 cups flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ginger
  • 1/4 tsp. ground cloves
  • 1 cup granulated sugar
  • 3/4 cup dark brown sugar
  • 1 egg yolk
  • 2 tsp. vanilla extract
  • 1 cup pumpkin puree

Directions

Preheat oven to 350 degrees F.

First place the butter into a sauce pan and melt over medium low heat, the butter will start to foam. Stir gently and using a spoon remove some of the foam off the top. After about 5-7 minutes the butter will start to brown at the bottom. Keep an eye so it doesn’t get too hot and burn. It will smell toasty and nutty, once browned remove from heat and set aside to let cool.

In a medium bowl whisk together the dry ingredients, the oats, flour, baking soda, salt, and spices.

Once cooled pour the butter into a large bowl and whisk in the sugar and brown sugar until combined. Then add the egg yolk, vanilla and pumpkin. Combine all together then gently pour in the dry ingredients and mix it all together making sure to scrap the sides so it’s all incorporated. The cookie dough should be thick and sticky.

Using a large spoon or ice cream scoop, spoon about 2 tbsp for each cookie onto a greased cookie sheet. Bake for about 12-14 minutes until lightly brown and set on the edges. Allow to slightly cool and then continue with the second batch. Serve immediately! I’m telling you they won’t last long, but if you have to store them put them in an air tight container or a cookie jar in the middle of the kitchen! The whole kitchen will smell amazing!
