Mint Chocolate Chip Cookies

 

With the holidays coming up and magic in the air, it’s time to make some christmas cookies for the cookie exchange or party. These melt in your mouth and the dough is like mint chocolate chip ice cream. Just a hint of mint and then the melting chocolate through out will be a hit at any get together. Happy baking!!

 

Mint Chocolate Chip Cookies

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cup sugar
  • 2 eggs plus 1 egg yolk
  • 1 tsp. peppermint extract (or more to taste, can be strong)
  • 1 tsp. vanilla extract
  • about 10 drops of green food coloring
  • 3 1/4 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt
  • 12 oz. semi sweet chocolate chips
  • white sparkling decorating sugar for garnish on top

 

Directions

Preheat oven to 350 degrees F.

In a large bowl or stand mixer, combine the butter and sugar and beat until well combined and smooth. About two minutes, making sure to scrape down the sides. Add the eggs, yolk, peppermint and vanilla extract and food coloring. Beat until food coloring is well distributed and all beautifully minty green.

In a separate bowl combine the flour, baking powder, baking soda, cream of tartar and salt. Add to the wet ingredients and mix all together. Then slowly add the chocolate chips until mixed throughout.

Wrap the dough in the bowl and chill for about 30 minutes.

Pour some of the decorating sugar into small dish. Take about 1/3 cup of dough and roll into a ball and then roll into the sugar. Place onto a greased baking sheet about 2 inches apart so they can grow. Bake for about 10-12 minutes until slightly golden on the edges and still a little soft inside. Let cool for about 5 minutes and then enjoy!
